First post on new blog about baking and living gluten free!

So picture this, you love to bake (in fact you've been at it over 40 years since you were 8 or 9), you just met Dave (the 2nd love of your life) a year or so ago and wedding planning is in full swing (including upcoming cake tastings), you've barely scratched the surface of baking for him all your favorite recipes in the 4 shelves full of cook books you've been collecting since forever, and he gets diagnosed with celiac disease! What!, no wheat, rye, or barley? Are you kidding me? I heard the diagnosis with very mixed feelings. Finally we had an idea why Dave had suffered with constant digestive problems, and anemia, but never to eat bread again? I kept thinking things like, "but I haven't made him german chocolate cake yet", and "I haven't baked my grandma's oatmeal cake, or made potato rolls for him". I felt heavy hearted and initially started to grieve a bit. I'm not one to wallow in self-pity though, and knowing that Dave would be healthy without wheat, gave me the motivation I needed. I got busy on the internet and started doing research on gluten free recipes. There were recipes out there, all right. They used flours with names of grains and seeds I'd barely heard of, but they sounded like they could be good. I bought some cookbooks and found out that the Bob's Red Mill store was only a 20 minute drive to Milwaukie. About a hundred dollars worth of ingredients later, I was on my way to my first gluten free baking adventure(not what I'd consider a success). Jump to the present, two and a half years later, and I'm a full time plus Neurosurgery Nurse Coordinator (still) who is in the planning stages of starting a gluten free commercial bakery in my spare time. Never in my wildest dreams could I have predicted this! Here is some food for thought, It is estimated that people with celiac disease dine out 80% less often than they did before they were diagnosed (if I were a restaurant owner, I'd take that into consideration when I updated my menu). How did I get from starry eyed about to be newlywed recreational baker to nearly overwhelmed (but happily married) about to be bakery owner?? More to come..........
